Recipe – Chicken, tomato and almond curry

So I love, love, love my Breville slow cooker with the sear pan.  Not only is it bigger than my old slow cooker but being able to sear in the same pan has saved me time and washing up – big plus!  This recipe will comfortably serve 4 but you can easily double it and make a big freezable batch.

Ingredients –

* 2 chicken breasts (or 4 chicken thighs) cut into cubes

* 1 brown onions, diced

* 2 tablespoons oil (sunflower, olive)

* 2 tablespoons garam masala or tikka masala curry paste

* 2 tins crushed tomatoes

* 150 -200g almond meal (I just put the whole packet in)

* Squeeze of lemon juice

* 100ml cream

Directions –

* Cook off the oil and the garam masala in a fry pan (or if you have my slow cooker over the stove top) until the lovely aroma fills the kitchen

* Add in the chicken and onion, cooking for 1 min

* Transfer to slow cooker

* Add in the tomato and almond meal, stirring well

* Cook on low for 2-3 hours, or high for 60-90 minutes (if you are using thighs I would recommend cooking for longer)

* Add in the juice of half a lemon and the cream, stirring well

* Cook on high for a further 10-15 minutes

* Serve with rice or couscous
